Healthy Meatloaf Casserole

One of my husbands favorite things to have for dinner is meatloaf, usually accompanied by mashed potatoes.  So I came up with the Healthy Meatloaf Casserole to put these two things together in a healthier way.  It’s pretty simple and delicious.  My oldest son said that it was FABULOUS, and that was a mom win for me because he has sensory issues and is a picky eater. 🙂


Healthy Meatloaf Casserole

First thing you do is make your meatloaf.  I use organic grass-fed lean ground beef for mine and I make it the way my grandma always made it.  I start with saltines, milk, and egg in my mixing bowl and let the saltines soak up some of the milk and soften up.  Then I add garlic, ketchup, onion, celery, salt and pepper, mix it up with my hands, the best tools in the kitchen!  I always top it with the classic brown sugar and ketchup mixture.  Pop it in the oven and when its close to done you add your cauliflower mash on top with some cheese! If you are not wanting this to be lower carb or healthier, you could always top it with mashed potatoes, but honestly this creamy cauliflower mash is SO good.  I don’t think you will miss the potatoes.  Give it a try and let me know how you like it!  You could also make this gluten free by using gluten free crackers.

Instructions
  1. Preheat oven to 350
  2. In a mixing bowl add 1/2 c milk and egg, whisk together. Then add crushed saltines, let them soak 2 minutes.
  3. After the saltines are soft, add in ground beef, garlic, onion, celery, 1/4 cup of ketchup, salt and pepper. Mix!
  4. In a separate small bowl mix together the rest of the ketchup and 2 tablespoons brown sugar.
  5. Put meat mixture in an 8x8 baking dish, press it down into the dish, and top with the brown sugar ketchup mixture.
  6. Bake at 350 for 50 minutes.
  7. After meatloaf has baked for 50 minutes top with cauliflower mash (find this recipe linked above above) and 1/4 cup cheddar cheese on top. Bake 10- 15 minutes. ENJOY!
