Soups are my jam.  There is just something about a big, warm bowl of comforting soup.  Tacos are also my jam, so putting them together in soup makes me do my happy dance.  My Easy Taco Soup with Chicken will be your new family favorite!

Easy Taco Soup

My Easy Taco Soup with Chicken is perfect for those busy nights when you want something easy and quick to make.  

One of my favorite kitchen tips for quick cooking is to buy a rotisserie chicken at the grocery store.  You can find cold chickens by the deli usually and they are cheaper.  Then you just take that baby home and shred it up.  Super easy and you can get about 4 cups of shredded chicken out of it with very little work.

Taco soup with chicken is great for a family dinner because everyone can top the soup how they like.  This recipe is a one pot meal, all you have to do is dump, cook and eat. 🙂 

 

INGREDIENTS

  • 4 cups shredded chicken breast
  • 2 small sweet potatoes, peeled and chopped into cubes
  • 6 cups chicken stock
  • 1 can (15 oz) of corn, drained
  • 1 can (15 oz) crushed tomatoes
  • 1 can (15 oz) black beans, with the liquid
  • 1/2 onion, diced fine
  • 1 T Olive Oil
  • 1 pack taco seasoning, I like Simply Organic Southwest Taco Seasoning 

Topping ideas: Cheddar cheese, Pepper jack cheese, Greek Yogurt, Sour Cream, Tortilla chips, Sriracha, Jalapenos, Onions, Guac, Lime wedge

How To Make Easy Taco Soup with Chicken

Heat your olive oil over medium heat in a soup pot, add in the diced onions.  Cook 5 minutes until softened.

Add everything else into the pot.

Bring to a boil.

Cook, uncovered for 25 minutes or until the sweet potatoes are tender.

Top with your favorite toppings and dig in!

Taco Soup Substitutions 

The great thing about soup is you can add in anything you like or leave out things you may not like.  Have extra veggies in the fridge?  Throw them on in!  Don’t like corn, leave it out!

You can also switch up the meat if you prefer something other than chicken.

Taco soup is super easy to make vegetarian or vegan as well.

Leave out the chicken and switch to vegetable broth.  You can throw in some extra beans or vegetables to keep it hearty and filling.  Top it according to your preferences.  Guac, sriracha, onions, jalapenos, lime wedge or tortilla chips can all still be added on top.

If you eat gluten free, this is already gluten free.  Just make sure the seasoning packet and cans of veggies you use doesn’t have any gluten in it.
