Creamy Avocado Chicken Salad with Bacon

Chicken salad is a delicious and practical way I like to use up any leftover chicken we have.  Typical chicken salad has tons of mayo, which I love, but it’s not great for you.  My recipe for avocado chicken salad is much healthier and clean because I use avocado in place of the mayo.  Trust me, you will not miss the old mayo filled chicken salad.  This healthy chicken salad with avocado and bacon will be your new favorite and it only takes about 10 minutes!

Creamy Avocado Chicken Salad with Bacon 


This recipe for avocado chicken salad is a great way to use up left over chicken.  If you do not have left over chicken, you can buy a rotisserie chicken from the store and shred that up.

Avocados are filled with healthy fats that are great to have in your diet.  Make sure you get a ripe avocado or the recipe will not turn out creamy.  The avocado you choose should be a little soft to the touch, not too mushy and not too firm.  You could also use guacamole in place of the avocado, if you prefer.

How To Make Healthy Chicken Salad

The easiest way to make this chicken salad recipe is to use a mixer.  I prefer my KitchenAid stand mixer because it does all the work for you.  You could also use a hand mixer instead.  The mixer shred the chicken up so nicely and mixes everything to the perfect chicken salad texture.

Place your chicken, avocado, garlic powder, onion powder, salt, black pepper, bacon bits and powdered stevia into the mixer.  Turn the mixer on medium speed and let it go for 5-10 minutes, or until it reaches a consistency you like.

You can use stevia as your sweetener, swerve, or whatever sweetener you prefer.

How To Eat Your Avocado Chicken Salad

You can serve this chicken salad in many ways.  I like to eat mine on a bed of lettuce.  My husband likes his on toasted bread.

This would also make a great appetizer served in lettuce cups or on some Hawaiian rolls. Yum!
