BBQ Chicken Wonton Cups

The new year is almost here so I am coming up with some appetizers, like these BBQ Chicken Wonton Cups, to celebrate.  Every New Years Eve my family gets together, we eat and play board games and have a great time.  I love it.  We have had this tradition since I was a kid.  So I do it with my kids now.  These would be great for any party or get together you are having, or even just for dinner!

This appetizer is healthy and delicious!  You need these ingredients.  Chicken breast, your favorite barbecue sauce, onion and garlic powder, chicken stock (or water) coleslaw mix, sesame ginger dressing, greek yogurt, and sriracha!  You could replace the chicken with pork if you prefer that.

I have a cool little tip for shredding the chicken breast.  First, you will boil the chicken breast.  I put frozen chicken breast in the pot, cover with water and cook about 30 minutes.  Transfer it to a bowl and use your hand mixer to shred it.  YES, I said your hand mixer.  It shreds the chicken perfectly (see picture below).  I will never shred chicken another way again!  I use my hand mixer to mix in the BBQ sauce also.

You need a cupcake pan for this recipe.  You will line each of the cups with 2 wonton wrappers, there is a picture below.  This makes them extra sturdy for grabbing and eating.  Make sure you spray each cup very good so the bottoms of the cups get crispy.

While these are in the oven you will make your coleslaw mixture.  It’s super simple, just coleslaw, plain greek yogurt and sesame ginger dressing.  If you eat this by itself it tastes a little tart and over dressed but I promise it is perfect on top of the cups!

Once they come out of the oven, top with with the coleslaw mixture and sriracha!  You can leave off the sriracha if you don’t like spicy food, but it is such a great addition to these BBQ Chicken Wonton Cups.

Instructions
  1. Preheat oven to 350
  2. Mix together shredded chicken, BBQ sauce, chicken stock, garlic powder, onion powder and salt. I use the hand mixer to mix and it works AMAZING. Set aside.
  3. Press wonton wrappers into a greased cupcake pan. I use two wonton wrappers for each cup. See picture above.
  4. Place a spoonful of the BBQ chicken mixture into each cup and bake 20 minutes.
  5. While those are baking make your coleslaw. Mix together coleslaw mix, greek yogurt and sesame ginger dressing.
  6. Take the cups out of the oven. Top with coleslaw mixture and sriracha.
