Copycat Olive Garden Zuppa Toscana

Zuppa Toscana is my favorite soup at Olive Garden.  Whenever we go there I always get the soup, salad and bread sticks, yum!  I decided to try to make this delicious soup recipe at home and it has been a family favorite ever since.

Copycat Olive Garden Zuppa Toscana

My husband and I celebrated out 7 year dating anniversary this past weekend.  He surprised me with this pink dutch oven I had been wanting.

Isn’t it a beaut? I LOVE IT!  This particular dutch oven is no longer made but here is another pink dutch oven that is just as cute.  Dutch ovens give even heat distribution and great heat retention.  They can also be used on stove top, broiler or in the oven.

It was feeling like fall out, so of course I decided I had to make our favorite soup in it for the special occasion.

Copycat Zuppa Toscana

This is a copycat Zuppa Toscana, the best soup at Olive Garden, according to me.  And I have to admit I like my own better than Olive Gardens.

I do a couple things to make this soup a little better for you. Such as using reduced fat sausage and light on the cream.

You could also swap out the potatoes for cauliflower and leave out the heavy cream.  This would make the dish healthier, loaded with veggies and lower carb.  I have made it with cauliflower and it is good.  But a little indulgence is good for you.  Balance my friends.

I have been making this soup for years, it’s simple, quick, and a one-pot dish.  If you don’t have a dutch oven , you can use a big pot like this one and that works just fine!


One of the best things about this recipes is how easy the clean up is.  You only need one pot to make Copycat Zuppa Toscana.

You will brown your sausage in the pot, then take it out and set it aside.

Put potatoes, onions, garlic salt and chicken broth into the pot.  Bring to a boil and cook until potatoes are fork tender.

Add back in the sausage along with the bacon bits.  Cook about ten minutes to let the flavors all come together.

Add cream and chopped kale.

That’s it.  I told you it was simple!

You can top it with some freshly grated Parmesan if you like.  Serve it up with a salad and bread sticks to get the whole experience.  They even make the Olive Garden salad dressing and croutons prepacked so you can enjoy them at home.

When I make Copycat Olive Garden Zuppa Toscana, I like to double the recipe and freeze half.  It freezes really well and when you want to eat it again for dinner in a couple weeks, all the work is done for you.

  1. Heat dutch oven/pot to medium heat. Cook sausage about 10 minutes until fully done. Then remove and set aside.
  2. Add chicken broth, potatoes, onion and garlic salt to pot. Bring to a boil and cook about 20 mins, stirring occasionally, until potatoes are fork tender.
  3. Add sausage back in, along with bacon bits. Cook 10 minutes to let flavors mix together.
  4. At the end add kale and heavy cream, salt and pepper to taste. And ENJOY!
