My husband and I celebrated out 7 year dating anniversary this past weekend.  He surprised me with this pink dutch oven I had been wanting.

It was feeling like fall out, so of course I decided I had to make our favorite soup in it for the special occasion.


This is a copycat Zuppa Toscana, the best soup at Olive Garden, according to me.  And I have to admit I like my own better than Olive Gardens.  It’s not the healthiest soup but I do a couple things to make it a little better for you. Such as reduced fat sausage and less cream.   You could also swap out the potatoes for cauliflower and leave out the heavy cream.  I have done this and it is good.  But a little indulgence is nice on special occasions.

I have been making this soup for years, it’s simple, quick, and a one-pot dish.  If you don’t have a dutch oven , you can use a big pot and that works just fine!

  1. Heat dutch oven/pot to medium heat. Cook sausage about 10 minutes until fully done. Then remove and set aside.
  2. Add chicken broth, potatoes, onion and garlic salt to pot. Bring to a boil and cook about 20 mins, stirring occasionally, until potatoes are fork tender.
  3. Add sausage back in, along with bacon bits. Cook 10 minutes to let flavors mix together.
  4. At the end add kale and heavy cream, salt and pepper to taste. And ENJOY!
