Fiesta Grilled Chicken

This Fiesta Grilled Chicken recipe came about when I went out to eat with my family at a Mexican restaurant.  I had been eating healthy and didn’t want to get anything that would make me feel crappy, so I ended up ordering this chicken.  It was a chicken breast, topped with cheese and it came with a guacamole salad on the side.  IT WAS SO GOOD!  So I decided to make my own version at home.

It starts off with a flavorful chicken breast, topped with cheese, guac, greek yogurt, lettuce, cilantro, and sriracha.  I don’t know about you but this sounds heavenly to me!

Fiesta Grilled Chicken


First, you are going to give this chicken breast some flavor.  Make yourself a spice rub in a small bowl out of Mrs. Dash garlic, cumin, chili powder and black pepper.  Then rub it all over your chicken breasts.  I know I talk about Mrs. Dash seasonings a lot, but I LOVE THEM.  Seriously, if you have not tried them yet, you can check them out here.  The chicken breast will look heavily seasoned, but we want it to have flavor!

Then, you will place your chicken on the grill, you can also cook this in a skillet if you prefer.  If I am unable to grill outside, I really like to use my indoor grill.  It has grill pans and griddle pans, you can use it for everything from pancakes to grilled chicken or making a panini!

Add some cheese and when it’s all done top it with all the goodies! 🙂

I really like this recipe because it is healthy but it also tastes amazing.  Perfect for when you are craving Mexican food but still want to stay on track with your healthy eating!  This recipe is packed full of protein and low carb.

Instructions
  1. Heat up grill on medium heat.
  2. In a small bowl, mix all the spices together and rub all over chicken breasts.
  3. Place chicken breasts on the grill, 5-6 minutes per side. 2 minutes before the chicken is done, top with the pepper jack cheese.
  4. Remove from heat.
  5. Cut each chicken breast in half. Top with 1 tablespoon greek yogurt, 1 tablespoon guacamole, 1/2 cup shredded lettuce, cilantro and sriracha on each piece.
  6. ENJOY!
