Are you a busy mom?  ME TOO!  I love having recipes that I can throw together, put in the oven, and get some other stuff done in the mean time.  Don’t get me wrong I love cooking, like a lot, but some nights I need easy dinners.  This Garlic Parmesan Sheet Pan Chicken Dinner is just that.  It has chicken, veggies, cheese and garlic, how can you go wrong with this dinner?

Garlic Parmesan Sheet Pan Chicken Dinner

This recipe came about when I had nothing really planned for dinner, but I had thawed some chicken.  I knew I had some veggies in the refrigerator that I needed use up, and bam came up with this Garlic Parmesan Sheet Pan Chicken Dinner.

My boys even loved this, they have sensory issues and are picky when it comes to eating, especially chicken.  My oldest son said this is the best chicken he’s ever eaten, MOM WIN. 🙂

You can’t go wrong with this recipe, it’s healthy and easy.  I used cauliflower and brussel sprouts in my recipe, but you can use whatever veggies you like, just make sure they have similar cooking times so they don’t end up soggy.  Potatoes would also be good added into the mix.

Everything is covered in cheese and garlic, you cannot go wrong with that combination in my book.  Another great thing about this sheet pan chicken and veggies is that you don’t have to make any sides to go with this, it’s a one pan meal!

Unfamiliar Ingredients in this one pan chicken dinner?

There are 2 things I use in the recipes that might not be familiar to you, Mrs Dash Garlic and Herb seasoning and nutritional yeast.  If you have not heard of Mrs Dash seasonings, let me tell you about them, they are amazing!  They have no salt, but are full of flavor.  So you can keep adding flavor without adding unnecessary sodium.  My 2 favorites ones are the garlic and herb and the extra spicy one.  The link to them is below so that you can check them out.

Nutritional yeast is used a lot in place of Parmesan cheese, it has the same cheesy flavor, but it’s good for you.  It is a complete protein source, it’s low glycemic and full of vitamin B.  I use it a lot in place of the Parmesan cheese shakers, if you are dairy free this would be a great thing for you to check out.

How to make this Garlic Parmesan Sheet pan Chicken Dinner

This recipe is so easy.  You’re just going to chop, mix, cook and eat.

Ingredients

-2 large boneless skinless chicken breasts, chopped into bite sized pieces
-2 c brussel sprouts, cut in half length wise
-2 c cauliflower, chopped
-1/2 sweet onion, diced
-1/4 c extra virgin olive oil
-1/2 c panko breadcrumbs
-1/2 c shredded parmesean
-1/4 c nutritional yeast (or more parm)
-1 T Mrs Dash Garlic and herb seasoning
-1 tsp garlic salt
-1/4 teaspoon black pepper

Directions

Preheat oven to 350

Put everything in a mixing bowl and mix it all together until everything is coated.

Dump it out onto a sheet pan and bake for 40 minutes, turning and mixing everything around halfway through.

Broil 5 minutes at the end to get everything nice and crispy.

Instructions
  1. Preheat oven to 350
  2. Place everything into a mixing bowl, mix it all together until everything is covered.
  3. Dump onto sheet pan
  4. Bake for 40 mins, moving everything around halfway through, then broil for 5.
  5. Enjoy!
