Grilled Chicken Caesar Panini

Grilled chicken Caesar salads are one of my favorite things, and I also LOVE a great Panini.  Why not combine the two things, am I right?  I was right, this Grilled Chicken Caesar Panini is simple and delicious!

I have a cool kitchen gadget I use for these sandwiches.  It’s a panini press but also a griddle and grill.  It’s awesome I use it for so many things.  I use it multiple times a week, burgers, pancakes, eggs, steaks, chicken, you name it!  When it’s cold out I can grill inside or use the griddle for breakfast!  Pancakes, anyone?

I use coleslaw in this recipe because I love the crunch it gives to the Panini.  Grilled chicken, bacon, parm and avocado are also added in the mix, you can’t go wrong with those ingredients.  If you want to make this recipe even quicker you could shred a rotisserie chicken from the store and use that!  I put all of this on ciabatta bread, it gets a nice crunch on it.  Tastes like you are eating Caesar salad on a big crouton!

This Panini is pretty big, half of one is the serving size.  Serve it up alongside some Parmesan garlic roasted veggies, yum!

I don’t eat sandwiches often but when I do I go all out!  If you don’t have a Panini press you could make it in a skillet grilled cheese style.  They are so good.  Hope you enjoy these! Let me know in the comments 🙂
