Healthy Puff Pastry Chicken Pot Pie

One of my favorite comfort foods is a rich and hearty chicken pot pie.  This pot pie recipes has all the flavor and is good for you.  That’s right, it’s good for you I said!!  I present you a Healthy Puff Pastry Chicken Pot Pie.  It’s packed full of vegetables and protein.  My kids love when I make this because we cut out different shapes into the puff pastry to put on top.  It’s so fun and yummy.

Healthy Puff Pastry Chicken Pot Pie

Simple and filling, this pot pie will surely be a new family favorite.  You can pick what vegetables you want to use.  I am a pea hater (which most pot pies have) and my kids aren’t broccoli fans, so I chose carrots, cauliflower and corn.  Pick your families favorites so everyone in your family can enjoy.  Mix those veggies with some chicken and seasonings and it’s just that simple.

Once you get to the puff pastry get out your favorite cookie cutters and let the kids help you out.  This is the fun part.  You can use your favorite shapes or use holiday theme, Halloween cutters or Christmas would be fun!

 

 

Healthy Breakdown

There are multiple swaps I made to make this dish healthier.  There is no crust on bottom and we use puff pastry to decorate the top, this cuts down on our carbs.  Also, no butter, oil, shortening etc, cutting down on the unhealthy fats.  I used shredded chicken breast that is packed full of protein.  This dish has a whopping 31 grams of protein per serving! 🙂

To get the creamy, rich, thick sauce into the Healthy Puff Pastry Chicken Pot pie, I used cornstarch and chicken stock.  A traditional chicken pot pie has over double the calories and 4x the fat and carbs as mine does. YIKES!  Mine is packed it full of vegetables, this dish is half vegetables and half chicken and ALL good for you!

Healthy Puff Pastry Chicken Pot Pie
Instructions
  1. Preheat oven to 400.
  2. Put shredded chicken, frozen vegetables, garlic and herb seasoning, and onion powder in a large mixing bowl.
  3. In a small saucepan mix the cornstarch with the chicken stock, bring to a boil, cook 3-5 mins until thick. Stirring occasionally.
  4. Add chicken stock mixture to chicken and vegetables.
  5. Transfer to a baking dish.
  6. Cut out your favorite shapes in the Puff Pastry and place on top.
  7. Bake for 30 minutes. ENJOY!
