Low Carb Cauliflower Casserole
This creamy and cheesy cauliflower casserole is the perfect low carb dish!
florets cut off
you can use any kind of milk
grated Parmesan cheese
Preheat oven to 350º
Bring a pot of water to a boil. Once the water is boiling, drop in cauliflower florets. Cook 7-10 minutes or until soft.
While the cauliflower is cooking, mix together egg, milk, 1/2 of the cheddar cheese, garlic powder, onion powder, cream cheese and Parmesan cheese in a small mixing bowl.
Remove cauliflower from water. Drain well. Place your cauliflower into a 9×13 baking dish. Mash it up with a potato masher.
Salt and pepper the cauliflower.
Add in the ham.
Pour the cheese mixture over the cauliflower and ham, top with remaining cheese and bake for 40 minutes.
Remove from oven and let sit 10 minutes. ENJOY!
