One Pot Taco Spaghetti

Tacos are one of my favorite foods.  I could eat them everyday.  I make regular tacos, taco salads, taco bowls, anything tacos.  So of course I had to make taco spaghetti! This One Pot Taco Spaghetti has all the flavors of a taco mixed with a big bowl of pasta. YUM!

One Pot Taco Spaghetti

Most of my dinner ideas come from throwing together random ingredients in my house.  This One Pot Taco Spaghetti is no different.  I hadn’t been to the grocery store, so I was trying to come up with something delicious for dinner, then I came up with this taco pasta dish.  It was a hit in my house.

You probably have most these ingredients in your pantry.

Here is what you need

1/2 sweet onion, chopped
1 lb lean ground beef
1 taco seasoning packet
1 14.5 oz can stewed tomatoes
1/4 c light sour cream
8 oz spaghetti
1 c corn
2 c Mexican blend cheese, shredded
3 c water

Simple!

This pasta recipe is great because it is made in one pot.  This makes for easy clean up, and I know as a mom I love that!

 

Tools You Might Need

 

Use a big pot with a lid, like this one, so you have enough room for your pasta to cook.

 

I also like to have a nice wooden spoon for dishes like that.  They are sturdy and don’t mess up your pans.

 

This measuring tool would be helpful to measure out your spaghetti.  You need 8 ounces for this recipe, which would be about 4 servings.

How to make One Pot Taco Spaghetti

In your big pot on medium heat, you will cook the ground beef and onion.  If you are using lean ground beef, there shouldn’t be to much grease so you won’t need to drain it off.  If you decide to use the 80/20 ground beef, you will need to drain off the excess grease.

Once your ground beef and onions have browned, you will add in the taco seasoning packet, stewed tomatoes, sour cream, corn, and water.

When adding in the stewed tomatoes, I like to squish them in my hands to break them up.  That way the chunks of tomatoes are just the right size.  You can also break them up with your spoon, but it isn’t as efficient.  Hands are the best kitchen tools!

Turn the heat up to high and bring the water to a boil.

Once water is to a boil, break the spaghetti in half then add it to the pot.  Now pay attention here, not the whole box.

Cover and cook about 8-9 minutes or until the spaghetti is done.  Stir occasionally to make sure the spaghetti doesn’t stick to the bottom.

Once the pasta is cooked to your liking, add in the cheese.  Stir it up and enjoy!

 

One Pot Taco Spaghetti Recipe Substitutions 

You can make this recipe gluten free by using gluten free spaghetti noodles and a gluten free taco seasoning packet

My favorite gluten free pasta is Ronzoni Gluten Free Thin Spaghetti.  It tastes just like regular pasta, you would never know the difference.

If you are vegetarian, you can leave out the lean ground beef and use black beans instead.  You will make the recipe almost the same way, except the first step.  Instead of cooking your lean ground beef and onion, you will cook just the onion in a little bit of olive oil.  Then follow the rest of the steps.

  2. Add in the taco seasoning packet, stewed tomatoes, sour cream, corn, and water. Break up the stewed tomatoes with hands or spoon.
  3. Turn the heat up to medium-high and bring the water to a boil.
  4. Once water is to a boil, break the spaghetti in half then add it to the pot. Stir to make sure spaghetti is covered in the water,
  5. Cover and cook about 8-9 minutes or until the spaghetti is done.  Stir occasionally to make sure the spaghetti doesn't stick to the bottom.
  6. Once the pasta is cooked to your liking, add in the cheese.  Stir it up and enjoy!
