Spicy Smashed Sweet Potatoes

Let’s talk about sweet potatoes.  They are one of my favorite things to eat and they are so versatile.  I love sweet potatoes every way I have ever tried them.  Baked, mashed, roasted, boiled, grilled, ANY WAY! I am always coming up with new ways to eat them.  Here I give you Spicy Smashed Sweet Potatoes!

Sweet potatoes are loaded with vitamin A and C, fiber, potassium and more.  They have more natural sugar than a regular potato but are more nutrient dense.  Here is a good article, from whfoods.org, if you want to learn about this super food.




This recipe is simple and delicious.  Sweet potatoes are already…well sweet.  So when you add spice a little cheese and crunch, magic happens.  I use one of my favorite spices Mrs. Dash extra spicy seasoning, the line of salt free seasonings is a great addition to any spice cabinet.  When I am making these I leave some without the spicy seasoning for the kids, they love them too.  With just 3 ingredients these couldn’t be easier to add to a meal, or eat as a snack.

Instructions
  1. Preheat oven to 350
  2. Peel and slice sweet potatoes, I try to get about 8 slices out of every potato
  3. Put sweet potatoes into a microwave safe bowl with water covering them. Cover the bowl, and microwave on high 5-6 mins, or until the potatoes are fork tender.
  4. Place sweet potatoes onto an oiled sheet pan, and smash with fork.
  5. Top with Mrs. Dash spicy seasoning and Parmesan cheese.
  6. Bake 15 mins, then broil until desired crispness. I like mine EXTRA crispy. ENJOY!
