Who doesn’t love nachos?  I know I do.  Typical nachos are an indulgence and not great for you, but this Sweet Potato Nachos Skillet Bake is something you can feel good about eating.  Made with delicious and healthy ingredients, this is the perfect recipe for the family.

To start the recipe off I use lean ground turkey, seasoned with a few spices and some crushed tomatoes.  If you are a fan a beef you can use that instead and if you are vegetarian you can leave the meat out and this meal will be just as delicious and hearty.

Sweet potatoes are used instead of the chips, their sweet flavor goes so well with the rest of the spices in the dish.  I love to use sweet potatoes instead of other carbs in my dishes.  They are full of vitamin A and are very nutrient dense.



The rest of the layers in this skillet bake are corn, black beans, and some cheese!  What’s not to love, am I right?  My husband said this dish was his favorite thing I have ever made.  Wife win! 🙂

I bake this in my cast iron skillet, but you can use a baking dish if you don’t have one.  If you do want to get one here is the one I have.  It’s inexpensive and a great start to cooking with cast iron.

Ground turkey mixture
Corn
Black Beans
Cheese
REPEAT ONE MORE TIME

When it’s done top with your favorite nacho toppings!

Sweet Potato Nacho Skillet Bake
Instructions
  1. Preheat oven to 350
  2. Put lean ground turkey, cumin, paprika, chili powder, garlic salt and crushed tomatoes in a skillet on medium heat, cook 15 mins. Stirring occasionally. Once done remove from heat and set off to the side for layering.
  3. In a cast iron skillet, place a layer of sliced sweet potatoes covering the bottom. Top with half of the meat mixture, half the corn, half the black beans, then half the cheese Repeat all layers, ending with cheese on top.
  4. Bake uncovered 45 minutes. When done top with your favorite nacho toppings, I like plain Greek yogurt or sour cream, sriracha and red onion! ENJOY!
