Sweet Potato Nachos Skillet Bake

Who doesn’t love nachos?  Typical nachos are loaded with unhealthy ingredients.  This Sweet Potato Nachos Skillet Bake is the perfect replacement, even the kids will love this one.  I decided to take everything I loved about nachos and throw it on top of sweet potatoes.  It’s so delicious and you won’t feel bad about it at all.

Sweet Potato Nachos Skillet Bake

I like to bake this in my cast iron skillet, you can use a baking dish instead if you don’t have one, but the cast iron is the best.  I have made this in a baking dish instead before and it was good, but the edges and bottom was not as crispy.  You’ll want to make this in something that is about 10-12 inches around.

To start the recipe off I use lean ground turkey, seasoned with a few spices and some crushed tomatoes.  If you are a fan a beef you can use that instead and if you are vegetarian you can leave the meat out and this meal will be just as delicious and hearty.

Since we are making sweet potato nachos, sweet potatoes are used instead of the chips, their sweet flavor goes so well with the rest of the spices in the dish.  I love to use sweet potatoes instead of other carbs in my dishes.  They are full of vitamin A and are very nutrient dense.
The rest of the layers in this skillet bake are corn, black beans, and some cheese!  What’s not to love, am I right?  My husband said this dish was his favorite thing I have ever made.  Wife win! 🙂

The great thing about this dish is that you can change it up however you like.  One night, I didn’t have the ground turkey but I had shredded chicken.  I seasoned it the same and used it in the dish and it was delicious as well.

Sweet Potato Nachos Skillet Bake

  1. Preheat oven to 350
  2. In a skillet, on medium heat, brown the lean ground turkey. Cook about 6 mins, or until almost cooked through. Drain off excess grease and put back into the skillet.
  3. Add in the cumin, paprika, chili powder, garlic salt and crushed tomatoes into the skillet and cook 10 mins. Stirring occasionally. Once done remove from heat and set off to the side for layering.
  4. In a cast iron skillet, place a layer of sliced sweet potatoes covering the bottom. Top with half of the meat mixture, half the corn, half the black beans, then half the cheese Repeat all layers one more time, ending with cheese on top.
  5. Bake uncovered 45 minutes. When done top with your favorite nacho toppings, I like plain Greek yogurt or sour cream, sriracha and green onions.
