In a skillet, on medium heat, brown the lean ground turkey. Cook about 6 mins, or until almost cooked through. Drain off excess grease and put back into the skillet.
Add in the cumin, paprika, chili powder, garlic salt and crushed tomatoes into the skillet and cook 10 mins. Stirring occasionally. Once done remove from heat and set off to the side for layering.
In a cast iron skillet, place a layer of sliced sweet potatoes covering the bottom. Top with half of the meat mixture, half the corn, half the black beans, then half the cheese Repeat all layers one more time, ending with cheese on top.
Bake uncovered 45 minutes. When done top with your favorite nacho toppings, I like plain Greek yogurt or sour cream, sriracha and green onions.
