BBQ Chicken Sweet Potato Sliders

BBQ chicken sweet potato sliders are one of my favorite meals to make.  They are simple, delicious and healthy.  I think pretty much everyone love burgers, I know I do.  But most burgers aren’t healthy.  These burgers are!

Instead of the typical beef for burgers, I switch it over to ground chicken.  And instead of buns, I use sweet potatoes.  YUM.  Top with your favorite BBQ sauce and a little mozzarella cheese, these are a hit.  They would be great for parties!  One thing I really like about these is the oven does all the work for you.  These can also be made in a pan or on the grill.  I just really love simple dinners!

 

Sweet potatoes, as I have said before, are one of my favorite foods.  They are so versatile and nutrient dense.  I am always coming up with new ways to eat them.  These BBQ chicken sweet potato sliders will leave you satisfied because you are still getting the healthy natural carbohydrates from the sweet potato.

If you are dairy free you can leave out the cheese, and they will still be delicious.  If you are vegetarian, use your favorite veggie burger in place of the chicken patty and let me know how it is! This recipe will easily become one of your family favorites.

These healthy chicken slider will leave you feeling satisfied and will become a family favorite!

Prep Time 10 minutes
Cook Time 45 minutes
Total Time 55 minutes

Ingredients

  • 1 lb ground chicken, lean
  • 2 large sweet potatoes
  • 1/2 tsp season salt
  • 1/2 tsp paprika
  • 1/4 tsp garlic salt
  • 1/4 tsp onion powder
  • 1/2 cup mozzarella cheese
  • 1/2 cup BBQ sauce

Instructions

  1. Preheat oven to 375
  2. Peel and slice sweet potatoes. I try to get 8 slices out of each potato, so that each slider has a top and bottom "bun". Lay them all out on sprayed baking sheet. Salt. Put in oven. Bake for 20 mins on the first side.
  3. While the sweet potatoes are baking mix ground chicken with spices and make 8 small patties. Put patties on sprayed baking sheet.
  4. After the sweet potatoes have cooked 20 mins on the first side, flip them. And put the chicken patties into the oven. Cook patties and other side of sweet potatoes 20 more mins.
  5. Take sweet potatoes out. Top patties with about 1 Tablespoon BBQ sauce and cheese each. Bake 5 more mins.
  6. When everything is done, its time to assemble. Sweet potato on bottom, top with patty, and sweet potato on top! Enjoy!
