You only need a handful of simple ingredients to whip up this mayo:

  • 2 eggs (room temp works best!)
  • ½ lemon, juiced
  • 2 tbsp red wine vinegar
  • 2 tbsp Dijon mustard
  • 1 tsp salt
  • 1¾ cup avocado oil (or try homemade mayo with olive oil, either oil works here.)
  • ¼ tsp garlic powder (optional, but adds great flavor, I love garlic in everything.)

This makes about 2 cups of mayo- you can cut the recipe in half to make less, depends how much mayo you use throughout the week.

How to Make Homemade Mayo

  1. In a wide mouth quart size mason jar or large mixing cup, combine eggs, lemon juice, vinegar, Dijon mustard, salt, and garlic powder.
  2. Pour in the avocado oil, letting it settle on top of the other ingredients.
  3. Using an immersion blender, place the blade at the bottom of the jar and blend without moving it for about 20 seconds. Then, slowly move the blender up and down until the mixture turns into thick, creamy mayo.
  4. Taste and adjust seasoning if needed. Store in a sealed jar in the fridge.
