One-Pot Stuffed Green Pepper Soup
One-Pot Stuffed Green Pepper Soup is one of my favorite dishes to make because it’s comforting, filling, and easy. Throw everything into a big pot and let it cook! Perfect for busy moms and the whole family loves this one.

Stuffed Green Pepper Soup
I really love soup, whenever that slight breeze of fall hits…I am READY for soup. My kids even joke about it whenever they feel the cool breeze, “I feel a breeze, mom will want soup”. My Stuffed Green Pepper Soup is so easy to make, a one-pot dish, and delicious.
You don’t need many ingredients in this soup to make it taste amazing. You probably have most of them in your well stocked pantry.
This green pepper soup is gluten free, will fill you up and has a good amount of protein too!

Stuffed Green Pepper Soup Ingredients
- 1.5 lb lean ground beef
- 8 c beef stock
- 1 -15 oz can crushed tomatoes
- 1 -15 oz can tomato sauce
- 3 green bell peppers – chopped
- 1 c mushrooms– sliced
- 1/2 medium onion, diced
- 1.5 c dry white rice
- 2 T Mrs. Dash Garlic and Herb seasoning
- 2 T brown sugar
- 1/4 tsp cayenne- you can add more if you like spicy food, when I’m cooking for my kids I don’t add any more.
- 1 tsp season salt
- 1 tsp oregano
- 1 tsp Worcestershire sauce
Like I say with all my recipes, feel free to make it your own! If you have ground turkey instead of ground beef, use it! Stewed tomatoes or whole tomatoes can work, just squeeze them through your hands when pouring them into the pan.
How To Make Stuffed Green Pepper Soup
- In a big soup pot, brown lean ground beef and season with salt and pepper. Cooke about 10 minutes, or until meat is almost fully cooked, stirring occasionally.
- Add in the rest of the ingredients to the pot, cover and cook 30-40 mins or until rice is done, stirring occasionally.
Top with cheese and parsley if you like. I like to serve mine with garlic toast.

Stuffed Green Pepper Soup Serving Size
This stuffed pepper soup recipe makes about 12 cups of soup. Each serving is 1.5 cups, which is a nice hearty serving for under 300 calories.
How To Store Stuffed Green Pepper Soup?
This is the BEST soup to eat for leftovers. The flavors deepen and makes a delicious lunch for a few days.
Store this one-pot green pepper soup in an airtight container for 3-4 days. You can also freeze the soup in these molds for the perfect lunch size portion. Just pop it in a pan or small crock pot to reheat your portion.
My soup sat and now it’s too thick, what should I do?!
Don’t panic, this soup has rice in it so if it sits, the rice absorbs more liquid and can get thick. Just add a little beef broth to loosen it up before you serve it or reheat it.
