One Pot Taco Spaghetti

Tacos are always a hit at my house and there are so many variations of tacos to make and try. So how about taco spaghetti? One Pot Taco Spaghetti is creamy, delicious and a quick dinner that the whole family will love. Try out this easy 30 minute meal for your next dinner!

One Pot Taco Spaghetti
Most of my dinner ideas come from throwing together random ingredients in my house. This One Pot Taco Spaghetti is no different. I hadn’t been to the grocery store, so I was trying to come up with something delicious for dinner, then I came up with this taco pasta recipe. It was a huge hit in my house and now it is one of our family favorites.
You probably have most these ingredients in your pantry.
INGREDIENTS
- 1/2 sweet onion, chopped
- 1 lb organic local ground beef – You can use ground turkey or chicken also.
- 1 taco seasoning packet, or make your own taco seasoning.
- 1 14.5 oz can stewed tomatoes
- 1/4 c sour cream
- 8 oz spaghetti- You can use a different pasta if you have that on hand.
- 1 c corn- Canned, fresh or frozen
- 2 c Mexican blend cheese, shredded – you can use any blend of cheeses you like or have on hand
- 3 c water
Simple!
This taco pasta recipe is great because it is made in one pot, like my One Pot Chili Mac and Cheese. This makes for easy clean up, and I know as a mom I love that!

How to make One Pot Taco Spaghetti Recipe
In a big pot over medium heat, cook the ground beef and onion. Break up the ground beef and cook until brown, 7-8 minutes.

Drain off any excess grease.
Add in the taco seasoning packet, stewed tomatoes, sour cream, corn, and water.
When adding in the stewed tomatoes, I like to squish them in my hands to break them up. That way the chunks of tomatoes are just the right size. You can also break them up with your spoon, but it isn’t as efficient. Hands are the best kitchen tools!
Turn the heat up to high and bring the water to a boil.
Once water is to a boil, break the spaghetti in half then add it to the pot. Now pay attention here, not the whole box. Only 8 ounces of Spaghetti, a little over half the typical box. I measure mine using a food scale.
Cover and cook about 8-9 minutes or until the spaghetti is done. Stir occasionally to make sure the spaghetti doesn’t stick to the bottom.

Once the pasta is cooked to your liking, add in the cheese. Stir it up, top with toppings of choice and enjoy!

One Pot Taco Pasta Substitutions
Gluten Free One Pot Taco Spaghetti: You can easily make this recipe gluten free by using gluten free spaghetti noodles and a gluten free taco seasoning packet.
My favorite gluten free pasta is Ronzoni Gluten Free Thin Spaghetti. It tastes just like regular pasta, you would never know the difference.
Vegetarian: Leave out the lean ground beef and use black beans or other bean of choice instead. You will make the taco spaghetti recipe almost the same way, except the first step. Instead of cooking your lean ground beef and onion, you will cook just the onion in a little bit of olive oil. Then follow the rest of the steps. Or try leaving out the meat and beans and just adding in extra veggies!

One Pot Taco Spaghetti

All the flavors of a taco, in a bowl of pasta! So cheesy and a quick 30 minutes meal.
Ingredients
- 1/2 sweet onion, chopped
- 1 pound lean ground beef
- 1 packet taco seasoning
- 1/4 cup light sour cream
- 1 cup corn
- 1 can stewed tomatoes, 14.5 ounce can
- 3 cups water
- 8 ounces spaghetti
- 2 cups Mexican blend cheese, shredded
Instructions
- In a pot on medium heat, brown lean ground beef and onion. Cook about 7-8 mins or until beef is cooked through.
- Drain excess grease from pot.
- Add in the taco seasoning packet, stewed tomatoes, sour cream, corn, and water. Break up the stewed tomatoes with hands or spoon.
- Turn the heat up to medium-high and bring the water to a boil.
- Once water is to a boil, break the spaghetti in half then add it to the pot. Stir to make sure spaghetti is covered in the water,
- Cover and cook about 8-9 minutes or until the spaghetti is done. Stir occasionally to make sure the spaghetti doesn't stick to the bottom.
- Once the pasta is cooked to your liking, add in the cheese. Stir it up, add toppings of choice and enjoy!

Seriously drooling as I read this! Do you ever wrap it in a burrito or make a sandwich with it?! I will try this one for sure with my toddlers!
