Low Carb Cauliflower Casserole

Cauliflower is a very versatile vegetable and so good for you.  It is used in many different low carb recipes or keto recipes.  Whether you are doing the keto diet, low carb diet, or just want to eat a little healthier, this Low Carb Cauliflower Casserole is for you!

Low Carb Cauliflower Casserole

I love using cauliflower in my low carb recipes.  It can be made so many different and delicious ways.  Even if you aren’t eating low carb, cauliflower is still good for you.  Cauliflower is low carb, has a good amount of fiber and loaded with vitamin C and A.

This Keto Cauliflower Casserole tastes like au gratin potatoes.  It really does!  I know, I know, lots of the time when people substitute healthier options, they claim it tastes like the unhealthy version, but this actually does! 

Even my kids LOVED this.  They didn’t even know it was cauliflower until I told them. 🙂

 

 

INGREDIENTS

-1 large head of cauliflower, florets cut off
-2 cups chopped ham
-1 egg
-1/2 cup milk (we use almond milk)
-1 cup cheddar cheese, shredded
-4 oz cream cheese, softened
-1 tsp garlic powder
-1/2 tsp onion powder
-1/4 cup Parmesan cheese

 

Tools You Might Need

 

I love having a pot like this on hand.  It makes things a little bit easier.  You will need to boil your cauliflower for this recipe, so this pot may come in handy.

How To Make This Low Carb Cauliflower Casserole Recipe

First, you will preheat your oven to 350º.

Bring a pot of water to a boil.  Once the water is boiling, drop in your cauliflower florets.  Cook about 7-10 minutes or until soft.  

While the cauliflower is cooking, mix together egg, milk, 1/2 of the cheddar cheese, garlic powder, onion powder, cream cheese and Parmesan cheese in a small mixing bowl.

Remove cauliflower from water.  Make sure the cauliflower is drained well.  We don’t want our casserole to come out watery.  

Place your cauliflower into a 9×13 baking dish.  Mash it up a little with a potato masher or back of spoon.

Salt and pepper your cauliflower.

Add in the ham.

Pour the cheese mixture over the cauliflower and ham, top with remaining cheese and bake for 40 minutes.

Remove from oven and let sit 10 minutes.

Substitutions 

This recipe can be changed to fit your needs.  If you do not like ham, you can substitute bacon or leave this ingredient out completely.  This low carb cauliflower recipe would be just as delicious without any meat, for all the vegetarians out there.  

You can also use any combination of cheeses that you like.  I really like cheddar and parm, but I think it would be delicious with pepper jack or another cheese as well.
