Easy Zucchini Fritters

I really love making these zucchini fritters when there is an abundance of zucchini in my garden. But even if you don’t have a garden, you can grab a couple zucchini from the grocery store or farmers market and make these. You only need a few simple ingredients and even if you don’t like zucchini- give them a try. I have fed these to people who don’t like it, but loved these delicious fritters. My kids also really love them!

The Best Zucchini Fritters Ingredients

  • 2 medium size zucchini- if they are small use 3-4
  • 1/2 cup spelt flour– you can also use regular all purpose flour
  • 1/3 cup mayo
  • 1/2 Tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 tsp salt

How to Make Zucchini Fritters Recipe

Preheat the oven to 425o

Shred the zucchini.

Place the shredded zucchini into a cheesecloth or a dishtowel and squeeze out any water. You want to get as much water out as you can so the fritters get nice and crispy.

Mix the shredded zucchini with the rest of the ingredients. It will be thick.

Line your baking sheet with parchment paper. I like to use a copper baking sheet to help the fritters get extra crispy.

Use an ice cream scoop or big spoon to place the batter on to the baking sheet and spread it out flat (like in the image below). Do this until you have used all the batter.
