Easy Turkey Tetrazzini has been one of my favorite meals to make for my family since I was a kid.  It’s the perfect leftover turkey recipe for after Thanksgiving.  You always have all that leftover turkey just ready to be shredded and thrown into some delicious Turkey Tetrazzini for the whole family to enjoy.

Leftover Thanksgiving Turkey Recipe

When I was a preteen I was OBSESSED with cooking, I watched nothing but the Food Network and cooked as much as I could.  One of my favorite cook books I had was Betty Crocker: Everything you need to know to cook today (it has since been updated many times).  This book is the perfect cookbook for beginner cooks.  It taught me so many things about cooking and it’s so simple to understand. 

After Thanksgiving one year I was browsing through my beloved Betty Crocker cookbook looking for some recipes to make with leftover turkey.  I came across the Chicken Tetrazzini and decided to make it with leftover shredded turkey.  I have made this recipe over 13 years changing things little by little into a recipe perfect for my family!  

That’s one of the things I love about cooking the most.  The Recipe should just be the guideline, once you get comfortable with cooking you will be able to adapt recipes to fit your family’s tastes.

Easy Turkey Tetrazzini with leftover Thanksgiving Turkey

Tetrazzini is a pasta dish made with mushroom cream sauce and usually with wine or sherry.  I like to use lemon juice in the place of this in my recipe.  I think it gives it a delicious bright flavor.  You can use whatever you prefer! Throw some shredded turkey into the mix and you’ve got the perfect dinner for the day after Thanksgiving.

You could eat this dish right off the stove top but cooking it in the oven gives it that bubbly, crispy cheese on the top!

When you make your trip to the grocery store just pick up a few extra things to make this Easy Turkey Tetrazzini.

 

INGREDIENTS

  • 1 pack spaghetti (7 oz)
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 teaspoon garlic salt
  • 1/2 teaspoon season salt
  • 1/4 teaspoon celery salt
  • 1 cup turkey broth
  • 1 cup heavy whipping cream
  • 2.5 cups shredded leftover turkey
  • 1 can mushrooms (4.5 oz) ,drained and chopped
  • 3/4  cup grated Parmesan cheese
  • 1 Tablespoon lemon juice

 

How to Make Easy Turkey Tetrazzini with leftover turkey

First, preheat your oven to 350°f

Cook spaghetti according to package directions.

Meanwhile, melt butter on low.  Once melted add in flour.  Cook a couple minutes until bubbly.

Stir in turkey broth, heavy cream, garlic salt, season salt and celery salt.  Bring to a boil then boil 2 minutes stirring the whole time.

Mix the sauce together with spaghetti, lemon juice, shredded turkey, mushrooms (see note below) and 1/4 cup of the Parmesan cheese.

Pour mixture into a 2 quart baking dish.

Top with remaining Parmesan cheese.

Bake for 35 minutes, until crisp and bubbly.

I like to top mine with chopped leaves from top of celery stalks.  It gives the dish another layer of celery flavor, but it’s totally EXTRA and not necessary.  You could use flat leaf parsley or nothing at all.

Mushroom note: You can leave the mushrooms as they are out of the can if you like.  I like to chop my finely because then my kids don’t know they are mushrooms and will eat it!  Mom win.  

 

Substitutions for Easy Turkey Tetrazzini

You can easily change this dish up to fit the dietary needs of your family.

Gluten Free: To make this dish gluten free replace the regular spaghetti noodles with Ronzoni Gluten Free Spaghetti and instead of flour use 2 Tablespoons of corn starch.  

Then, follow the same recipe as above.

Dairy Free: I have made this recipe dairy free before.  There are 3 sources of dairy in this recipe.

-Butter
-Heavy cream
-Parmesan cheese

These are easy to swap out with vegan products.

-Vegan Butter/ Plant Based Butter
-1/3 c light olive oil + 2/3 c your favorite dairy replacement milk
– You can eliminate cheese all together or use a nut based parm cheese

Then, follow the same recipe as above.
