Quick Soup Recipe From The Pantry

My White Bean Soup with Bacon can be made right out of the pantry and is the perfect quick soup recipe.  It only takes 9 ingredients and can be made in less than 20 minutes from start to finish.  If you don’t have the same ingredients for this soup that I have in my pantry, you can substitute what you have.  For example, if you have different beans than I do, use those!  Use a recipe as a guideline to cooking, then make it your own!

I have said it before and I will say it again, I love making soups!  And eating them.  They are packed with flavor, easy to make, and you can always change them up easily to fit your families needs.  This quick soup is hearty and delicious.  And the best of all, my kids LOVED it.

My delicious white bean soup with bacon has a whopping 43 g of protein per serving.  🙂

 

Here are the pantry ingredients you need

  • Bacon bits- You can use real bacon if you have it or prefer.  I always have bacon bits on hand in my pantry because they give great flavor to soups and vegetables without having actual bacon.
  • Can of Carrots- Like I said above you can use fresh if you prefer, but to make this a quick soup and from the pantry I like to use carrots from a can.  They are already soft, so you can throw them into the soup easily and can keep them on hand in the pantry.
  • Cannellini Beans, Butter Beans, and Chickpeas- I like to use canned beans for this to keep it quick and easy, but if you have dried beans or prefer to use those, you can!  You just need to cook them before adding them to the soup.  Use whatever white beans you like.
  • Mrs.Dash Garlic and Herb Seasoning- This is my favorite seasoning to keep on hand.  It has so much flavor and no added salt.
  • Basil, Oregano, Salt and Pepper- These are the last seasonings that you need.  You can always use Italian seasoning if you have that on hand.
  • Chicken Broth- You can use vegetable broth or chicken bullion and water if you have that.

How To Make White Bean Soup with Bacon

Put everything into the pot.  Cover and bring to a boil.

Once it is boiling.  Remove lid and cook 10-15 minutes while boiling.  Stir occasionally.

Scoop out some of the soup and blend it up with an immersion blender.  Then dump it back into the pot.  This helps it get thicker without using cream or any other thickening agent.

Salt and Pepper to taste.

Serve it up with some delicious garlic bread and Parmesan cheese on top!

This soup is already gluten free and good for you, but you can easily make it vegan or vegetarian too.

Vegan- Use vegetable broth instead of chicken broth and leave out the bacon bits and Parmesan cheese.

Ingredients

  • 1/4 c bacon bits
  • 1 can cannellini beans, drained
  • 1 can butter beans, drained
  • 1 can chickpeas, drained
  • 1 can sliced carrots, drained
  • 4 c chicken broth
  • 1 tsp Mrs. Dash Garlic and Herb seasoning
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • Salt and Pepper to taste

Instructions

  1. Put everything into the pot.  Cover and bring to a boil.
  2. Once it is boiling.  Remove lid and cook 10-15 minutes while boiling.  Stir occasionally.

  4. Salt and pepper to taste.
  5. Serve with Parmesan cheese on top and garlic bread on the side!
