Chicken salad is a delicious and a great way to use up leftover chicken. My Avocado Chicken Salad Recipe is much healthier than typical chicken salads.  Trust me, you will not miss the old mayo filled chicken salad.  This easy chicken salad recipe will be your new favorite and it only takes about 10 minutes!

Avocado chicken salad with bacon is a great way to use up left over chicken.  Gives you something to delicious to eat for lunch the next day.

If you do not have left over chicken, you can buy a rotisserie chicken from the store and shred that up.  This is my favorite time saver when I need shredded chicken.

Making chicken salad healthier is pretty easy.  Switching to avocado instead of mayo make this easy chicken salad recipe delicious and good for you.

Avocados are filled with healthy fats and vitamins so swapping them for mayo is a great choice for many recipes or even sandwiches. 

Make sure you get a ripe avocado or the recipe will not turn out creamy.  The avocado you choose should be a little soft to the touch, not too mushy and not too firm.  You could also use plain guacamole in place of the avocado, if you prefer or you can’t find a good avocado.

INGREDIENTS

  • 3 cups shredded chicken
  • 1 avocado
  • 1/4 c bacon bits (You can make your own bacon if you prefer, I always have real bacon bits in my pantry so I use them a lot, saves time and money.)
  • 1 tsp garlic powder
  • 1 tsp stevia powder (You can use any sweetener you like or leave out, I like a hint of sweetness in mine.)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp onion powder

You can see why this recipe is so easy to throw together, only takes chicken and a few ingredients you probably already have on hand.

 

How To Make Avocado Chicken Salad with Bacon

The easiest way to make this chicken salad recipe is to use a mixer.  I prefer my KitchenAid stand mixer because it does all the work for you.  You could also use a hand mixer instead.  The mixer shreds the chicken up so nicely and mixes everything to the perfect chicken salad texture.  You don’t even have to shred the chicken before hand!  How easy is that!?

Place everything into the mixer.  Turn the mixer on medium speed and let it go for 5-10 minutes, or until it reaches a consistency you like.

That’s it!  Super simple.

How To Eat Your Avocado Chicken Salad

You can serve this chicken salad in many ways.  I like to eat mine on a bed of lettuce.  My husband likes his on toasted bread.

Here are other ideas

  • Stuffed into celery sticks
  • On top of cucumbers
  • As a sandwich

This would also make a great appetizer served in lettuce cups or on some Hawaiian rolls. Yum!
