Best Soft Chocolate Chip Cookies
For Christmas I received a Kitchen Aid Mixer, so of course I have been trying to use it all I can. We had family over for New Years and made some appetizers and desserts. One of the desserts I made in my new Kitchen Aid Mixer is this Big and Soft Chocolate Chip Cookie recipe.
I am not a huge fan of cookies, like they are my least favorite dessert, unless they are soft. But I am telling you these are the best cookies I have ever eaten. They are so soft, full of chocolate and huge! These are a must try. I love some soft cookies.
Making the chocolate chip cookies in the kitchenaid makes this recipe super simple.
INGREDIENTS
- 2 c flour
- 1/2 tsp baking soda
- 3/4 c white sugar
- 3/4 c brown sugar
- 3/4 c melted butter
- 1 egg + 1 egg yolk
- 1 T vanilla extract
- 1 12 oz bag chocolate chips, I use semi sweet or dark
Kitchenaid Mixer Cookie Recipe
Preheat oven to 350°
First, sift together flour and baking soda in a mixing bowl and set aside.
Cream together butter and sugars in your stand mixer. Do this for like 5 minutes. This is an important step for incorporating air into the dough.
Next, add in the vanilla and eggs mix until light and fluffy.
Add in the dry ingredients a little at a time until mixed in.
Then fold in the chocolate chips. Lots of chocolate chips!
Refrigerate 10-15 minutes to help the dough firm up.
Scoop out 1/4 cup size scoops, I use an ice cream scoop it makes the cookies all the same size for better baking, and place on a lined baking sheet. Leave at least 2 inches in between cookies.
Bake for 15 minutes.
Remove the those soft chocolate chip cookies from oven and let cool 10 minutes.
ENJOY!
This recipes makes 11-12 big cookies.
Kitchenaid Chocolate Chip Cookie Storage
Store these soft chocolate chip cookies in an air tight container for up to a week. But I am sure they will not last that long. They don’t last one day at my house.
