Butternut Squash Applesauce Muffins
This butternut applesauce muffin recipe is maybe my favorite healthy muffin recipe I’ve ever made. These muffins are so sweet and delicious without processed sugars!

Butternut Squash and Applesauce Muffins
We grew butternut squash in our garden this year and they store really well. You can store butternut squash for a few months on the shelf in the right conditions. Since we had a few stored, we decided to use them to make some muffins.
Roasted butternut squash tastes very similar to pumpkin. So you can use it in muffins or breads that call for pumpkin. I usually cut the stem part off of my butternut squash, eat that like I would a sweet potato, and the fat part that contains the seeds- I roast for muffins.
Even though these muffins don’t have added processed sugar they are so sweet and delicious. The butternut squash, apple sauce and honey are all sweet enough!
Trust me these applesauce muffins are so moist and yummy. My kids and husband beg for these. And they are easy enough that the kids can help make them too.
Applesauce Muffin Recipe
Before you start the recipe, you want to make sure you have your butternut squash already cooked.
I roasted mine in the oven at 375 for about 45-50 minutes or until it was soft. Then remove it from the skin and blend it up. Now it’s ready for the muffins.
Ingredients for Butternut Applesauce Muffins
- 1 cup butternut squash puree – You could also use pumpkin here
- 1 cup unsweet applesauce
- 1.5 cups flour
- 1.5 tsp ground cinnamon
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup honey
- 2 Tbsp melted butter
- 1 tsp vanilla
Optional Additions
Chocolate Chips- You can add in chocolate chips if you like. My kids love them with chocolate chips so I usually add chocolate chips to some of them or all depending on how many batches I am making.
Nuts- I love nuts on top of or in my muffins. I usually add almonds on top for myself, but you can add any nut you like.
How to Make this Butternut Squash Applesauce Muffin Recipe
- Preheat oven to 350°
- Line muffin pan and spray or oil liners. I like to use parchment paper liners.
- In a large mixing bowl, combine flour, cinnamon, baking soda, baking powder, and salt.
- Make a well in the middle, add eggs, honey, butter, vanilla, applesauce and butternut puree. Mix together in the middle well.
- Mix everything together in bowl until combine.
- Fill muffins cups- this makes a little over 12 muffins. I usually fill a small little baking dish with the extras but you could just make more muffins in another pan.
- Bake 18-23 minutes

- optional- 1/2 c chocolate chips added to batter or nuts on top before baking
Instructions

Storing Applesauce Muffins
I store these healthy applesauce muffins in a sealed bag or container in the refrigerator to keep them fresh longer. They can be stored up to 5 days, although they do not last that long at my house ever!
How Many Applesauce Muffins does this recipe make?
This recipe makes 12-14 muffins. I usually end up with 12 muffins and then I fill a little baking dish with the rest. You can do whatever makes you happy.

Just made them, I hope they come out good as I did not know what 2T of butter meant , so I used 2 tbsp.
