Mini Pancake Muffins with Sausage

These mini pancake muffins with sausage are one of my favorite easy breakfast recipes to make. They are packed with protein and come together in just 15 minutes! My kids love these for breakfast or a snack.

Pancake Muffins with Sausage
Pancake muffins are probably one of my favorite things to make for breakfast. You can make them so many different ways, everyone loves them, they are super easy to make and very budget friendly.
I like to make my pancake muffins with sausage to give them some protein. As a homeschooling family, having some protein in the morning is very necessary so my kids don’t “Can I have a snack?” me to death.
Even if you are not a homeschooling family, giving your kids a little extra protein in the morning will help hold them over until lunch.
Each one of these mini pancake muffins has 4 g of protein!

Let me tell you how easy these Mini Pancake Muffins are to make!
INGREDIENTS
- 1 cup organic complete pancake mix
- 1/3 cup milk
- 1 egg
- 1/4 cup real maple syrup
- 1 cup sausage crumbles
When making this recipe you can change up so many things to fit your families needs. There are so many different types of pancake mixes, you could change it up with for a special occasions or try different add ins, maybe cheese!
Or maybe you don’t like sausage? Use bacon or ham! Maybe you don’t eat meat, you can add in whatever you like. Chocolate chips, peanut butter, blueberries, strawberries, the possibilities are endless! 🙂

How To Make Mini Pancake Muffins with Sausage
Preheat oven to 350°.
Mix all ingredients together, except the sausage in a mixing bowl.
After you’ve mixed it all together, fold in the sausage. Don’t over mix, you don’t want the pancake muffins to be tough.
Spray mini muffin pan with non-stick cooking spray.
Use cookie dough scoop to evenly distribute the batter into all the cups.
Bake for 10-12 minutes or until lightly brown around edges.
There is syrup already inside of these pancake muffins so they are already loaded with maple flavor. If you can’t get enough of the syrup flavor, you can serve them up with a warm bowl of syrup.

Meal Prepping Pancake Muffins with Sausage
You can make these Mini Pancake Muffins and have them ready for the rest of the week.
I like to make 48 mini muffins at a time.
- 4 cups organic complete pancake mix
- 1 1/3 cups milk
- 4 eggs
- 1 cup real maple syrup
- 4 cups sausage crumbles
Use large mini muffin trays like these ones to make baking 48 mini muffins easier.
Follow the same directions as the regular recipe.

Storing Sausage Pancake Muffins
For the week: Let them cool, then place them into a airtight container in the refrigerator. They last about 4-5 days. With my 3 kids and my husband 48 mini muffins are gone even before that.
Freezing: After letting the pancake muffins with sausage fully cool, place them onto a cookie sheet and into the freezer for 2 hours. After they are frozen you can put them into a zip lock bag and into the freezer.
You can reheat the mini pancake muffins in the microwave, toaster oven, or regular oven for a large batch.

Ingredients

Instructions
- Preheat oven to 350
