Healthy Banana Oatmeal Muffins- 2 Ways

Banana muffins or banana bread is one of my favorite things to snack on.  I wanted to make a muffin that tastes great but is better for you.  These are especially great for kids.  I have Healthy Banana Oatmeal Muffins, two different ways for you.  This recipe is so versatile, you can make these with your favorite things.

Healthy Banana Oatmeal Muffins


After learning that I have an auto-immune disease I have been trying to cut out gluten to see if I feel a difference in my body, so this recipe is gluten-free.  The oatmeal takes the place of the flour in these gluten-free muffins.  Make sure to check the label of the oatmeal if you need to be gluten-free, some oatmeal products say they may contain wheat.  Here is a good gluten-free oatmeal.

The best thing about these healthy banana oatmeal muffins is that you put everything into a blender and it does all the mixing for you.  The Ninja Blender is my favorite for making blender muffins, mashed potatoes, smoothies and more.  I have had mine for years and it still works great, I use it daily.

Healthy Oatmeal Muffins- 2 Ways

When I made these Healthy Banana Oatmeal Muffins for the first time, I fell in love.  They were so delicious and gluten-free as well, I couldn’t get enough.  My kids and husband enjoyed them, but said that adding some chocolate in would make them even more delicious!

 

Healthy Chocolate Chip Banana Oatmeal Muffins

My kids favorite way I make these muffins is with chocolate chips, of course.  I have tried to make many different gluten-free chocolate chip muffins, this recipe is the best.  They come out with a nice fluffy texture, you can’t even tell they are gluten-free.

The ingredients are so simple, there are only 8!  Bananas, oatmeal, eggs, Greek yogurt, brown sugar, chocolate chips, baking powder and baking soda.

Now, let me tell you how easy they are to make. 🙂

Throw everything into the blender, except the chocolate chips.

Blend on high for a couple minutes, scrape down the sides of the blender if needed.

Once it is smooth, fold in the semi sweet chocolate chips.  You could also use white chocolate chips, peanut butter chips, butterscotch chips, the possibilities are endless. Well maybe not endless, but there are a lot.

Then you will pour into a muffin/cupcake pan.  I don’t like to use cupcake liners for these muffins, they lack the oil of regular muffins and I think they come out better without the liners.  If you choose to use liners, spray the liners before putting the muffin mix into them.

This blender muffin recipe will make 12 muffins.

Bake for 15 minutes at 400, or until a toothpick comes out clean.

Healthy Cinnamon Banana Oatmeal Muffins

This healthy banana oatmeal muffin recipe is the one that I enjoy.  I don’t really like chocolate chips in my banana muffins because I think it over powers the muffin and then I can’t taste the banana.  I just really love banana.

Just like the recipe above, this blender muffin recipe has 8 ingredients.  Bananas, oatmeal, eggs, Greek yogurt, brown sugar, cinnamon, baking powder and baking soda.

This recipe is even easier because you can throw all the ingredients in the blender this time.

Here’s how to make this healthy oatmeal muffin recipe.

Healthy Banana Oatmeal Muffins

These gluten-free banana muffins are my new go-to healthy snack.  I love to make batches of them to have throughout the week.  Store them in an airtight container.  I like to keep mine in the refrigerator and warm up to eat.  Yum!
