Easy Turkey Meatballs

I have been living a healthy lifestyle for almost 8 years, before that I was very unhealthy.  On my journey I have found that I feel best while eating a low carb, high protein diet.  I do not follow a keto diet but I do like to use and create keto or low carb recipes regularly.  Like my recipe for keto cheese crisps!

This easy turkey meatball recipe is low carb, as in almost none, gluten-free and keto.

This recipe, like most my recipes, came about when I was looking to throw something together for dinner.  I had some ground turkey thawed out and thought why not create some delicious stuffed meatballs.  Then these babies were born, they were a hit at my house!

I like to cook my meatballs first in a skillet then transfer them to the air fryer.  If you don’t have an air fryer, you can use the oven or fully cook them in the skillet.

INGREDIENTS

– 1 lb lean ground turkey
– 1/4 cup grated Parmesan cheese
-1/4 cup heavy cream
– 1 egg, beaten
-1/4 cup onion, chopped very fine
-1/2 teaspoon garlic powder
-1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 mozzarella cheese sticks, each stick cut into 8 pieces, 16 pieces total
– 2 Tablespoons olive oil

How to make Easy Turkey Meatballs Stuffed with Mozzarella Cheese

Mix all your ingredients into a large mixing bowl, except the cheese sticks and olive oil.

Mix everything until combined, but don’t over mix.

You want to get 16 meatballs out of this, so try to score your meat and get even amounts.

Grab your meat mixture, roll it into a ball, shove a piece of cheese into the middle and roll the meatball around it.

Then, heat your skillet over medium heat with the 2 tablespoons of olive oil.

Pan fry your meatballs about 8 minutes, turning it on all sides.

Transfer to air fryer for 5 minutes at 400º.

If you don’t have an air fryer, you can pop them under the broiler for 5 mins, turn halfway through.

ENJOY!

Stuffed Turkey Meatballs

There are so many different ways you can make these meatballs with different meat and cheese combinations.  You could switch it up to ground chicken and use barbecue as a dipping sauce.  There are so many possibilities.

Easy Turkey Meatballs Stuffed with Mozzarella Cheese are perfect served up as an appetizer with your favorite sauce, such as marinara or Alfredo.  I like to stick some pretzels or little breadsticks in them for a party, this really makes them party friendly.  No utensils necessary.

Or enjoy these meatballs plopped up on a big pile of spaghetti with your favorite sauce, that would be a super easy dinner recipe for the family and it looks super fancy.
