Quick and Easy Veggie Sandwich

This super easy veg cheese sandwich is one of my favorite things to eat. Takes less than 10 minutes to make, tastes delicious and is good for you too! Try this Easy Veggie Sandwich for lunch, dinner, or a snack!

Vegetarian Sandwich
We don’t eat meat for every meal at my house, maybe only once a week. This helps saves us money because meat is the most expensive thing I was buying at the grocery store but also for health reasons.
Even if you love meat, this sandwich is so good and refreshing, you won’t miss the meat.
For this veg sandwich recipe you can use any vegetables you like or have on hand to make it your own. Letting your kids choose what goes on their sandwich is also a fun way to get your kids in the kitchen helping.
Easy Veggie Sandwich Ingredients
- Dave’s Killer Bread-Good Seed – This is my absolute favorite bread to use, it’s hearty, has great texture and tastes delicious. It’s good for you too. You can use your favorite bread if you prefer. My husband loves this veggie sandwich on a brioche bun.
- Avocado
- Cucumber slices
- Organic Cheese Slices -Use any type you like, I usually get white cheddar.
- Lettuce
- Pea shoots or microgreens
- Mayo -I like organic regular mayo, but you could also use avocado mayo, or none.
- Salt and Pepper

If you don’t have one of these vegetables, you can leave it out or replace it with something you do have.
Now that you know what you need, let’s make this yummy vegetable sandwich!
Veg Sandwich Recipe
This sandwich is really easy to make. Once you chop your vegetables all you have to do is assemble.
- Prep your veggies- slice the cucumber, get a few leaves of lettuce, and open your avocado so it’s all ready to go.
- Toast bread lightly.
- Mayo both sides of toast.
- Place 1/2 the avocado on one side of the toast, smash it with a fork onto the bread. Add salt and pepper to the smashed avocado.
- Top with cheese slices.
- Now a layer of sliced cucumbers. Salt and pepper this layer too.
- Add lettuce and pea shoots or microgreens next.
- Top with second piece of toast.
- ENJOY!

You could serve with air fryer sweet potato fries or Quick Flavorful frozen vegetables as a side.

This recipe makes 2 sandwiches. One whole veg cheese sandwich is a serving size.
If you only want to make one sandwich, you can save the other half of you avocado by leaving the pit inside of it, covering it with plastic wrap and putting it into the fridge.

Is this a vegan veggie sandwich?
The veggie sandwich that I usually make is not vegan but can very easily be made vegan by only changing 2 things.
Swap regular mayo for a vegan option and leave out the cheese or use a vegan cheese you like.
