Garlic Lemon Shrimp and Vegetables is an easy one pan meal that can be made in the air fryer or in the oven.  Delicious and juicy shrimp, broccoli and cauliflower combined with garlic and lemon make this dish flavorful and bright.  You only need a few ingredients and 10 minutes to make this easy shrimp and veggies recipe.

Air Fryer Shrimp

My favorite way to make shrimp is in the air fryer.  They take less than 10 minutes and are always juicy and delicious.  I have said it many times, the air fryer is a must have kitchen item for me.  It makes cooking certain things so much easier and quicker.

One of my kids LOVES shrimp.  He would eat it everyday if I would let him.  He only likes it with garlic so I decided to make this easy shrimp recipe for dinner to keep it has the same basic garlic flavors but changes it up a little bit.  It was a hit and it couldn’t be any easier to make.  

You only need 6 ingredients, plus salt and pepper.

Garlic Lemon Shrimp and Vegetables

INGREDIENTS 

I like to use cauliflower and broccoli in this recipe because they cook perfectly along with the shrimp.  You can use other vegetables if you have those on hand.  Change up the recipe to fit your families taste.  Zucchini would be delicious in this air fryer shrimp recipe.

You could even just cook the shrimp if you prefer.

If you do not have Mrs. Dash garlic and herb, you can use garlic salt or garlic powder.  I really love the Mrs. Dash line of seasonings, they are very flavorful and don’t have any salt in them.  They are one of the things I make sure to have in my well-stocked pantry.

 

How To Make Garlic Lemon Shrimp and Vegetables

If you are cooking your shrimp in the oven, preheat the oven to 400° F.

Cut the cauliflower and broccoli into small bite size pieces and place into a large mixing bowl along with the shrimp.  You want them to be about the same size as the shrimp so they cook properly.  If you have bigger shrimp, cut the vegetables according to that size.

 

Garlic Lemon Shrimp and Vegetables

In a small mixing bowl, mix together juice of half the lemon (save the other half for serving), Mrs. Dash garlic and herb seasoning, and extra virgin olive oil.

Pour mixture over shrimp and veggies, mix until everything is coated.

 

 

AIR FRYER COOKING: Dump shrimp and vegetables into air fryer, salt and pepper. 380° for 6 minutes.  Stir around.  Cook 2 more minutes.

OVEN COOKING: Dump shrimp and vegetables onto lined sheet pan, salt and pepper. Cook for 8-12 minutes.

 

 

The shrimp is done when it is light pink.  If you use a bigger shrimp size you might have to add a couple minutes.

Serve with some lemon slices.  Try serving with Easy Instant Pot Sticky Rice.
