Quick Veggie Fajitas with Sweet Potato

Vegetarian Fajita Recipe
One of my favorite recipes to make is veggie fajitas. It’s quick, easy and so delicious! If you are a meat eater, you won’t miss the meat. I promise!
The great thing about this recipe is you can use whatever vegetables you have on hand. It’s a great way to use up veggies that are going to go bad. This is also the perfect opportunity to get some extra veggies into your diet.
People always tell me that they just don’t like vegetables and I always tell them, maybe they haven’t had a vegetable cooked in a delicious way. With seasonings and proper cooking veggies can taste amazing. Try my Quick Frozen Veggies for another delicious veggie recipe.

Healthy Fajitas
Make this recipe your own by using the vegetables your family loves! Sometimes I throw in whatever vegetables I need to use up in the fridge into the recipe but I also have a favorite combination of veggies I use alot to make my quick veggies fajitas. That’s the recipe below.
Here is what you need.
Veggie Fajita Ingredients
- 1 Large Sweet Potato, Peeled and Chopped
- 1 Bell Pepper, Chopped
- 1 Small Onion, Chopped
- 1 Cup Mushrooms, Chopped
- 1 Cup Broccoli, Chopped
- 1 T Olive Oil
- 1/4 Cup veggie broth or water
- 6 corn or flour tortillas or lettuce cups
Veggie Fajita Seasoning Ingredients
- 1 tsp Paprika
- 1 T Mrs Dash Garlic and Herb
- 1 tsp Garlic Powder
- 1 tsp Chili Powder
- 1/4 tsp Cayenne Pepper, can add more if you like it hot
- 1 T Mrs Dash Southwest Chipotle
- Salt to taste
Veggie Fajita Topping Ideas
- Guacamole Salsa
- Cilantro
- Sriracha
- Organic Sour Cream, or a plant based version if you are vegan

How To Make My Vegetarian Fajita Recipe
- Heat a large skillet up over medium heat. Add Olive Oil
- Add in sweet potato, bell pepper, and onions to the skillet. Cook 10 minutes, stirring occasionally.
- Add in broccoli and mushrooms. Cook another 10 minutes, stirring occasionally.
Note: This will depend on the vegetables you are using. The sweet potato, bell pepper and onions go in first because they take longer to get softer. The broccoli and mushrooms take less time. Add your vegetables to your skillet accordingly. - Add in broth or water and the veggie fajita seasonings.
- Stir and cook another 5-10 minutes until water has evaporated and veggies are tender.
- Heat up your tortillas and stuff them with your delicious veggie fajita mix!
- Top with your favorite toppings. 🙂
Try serving with Spanish rice.

Leftover Veggie Fajitas
I love this recipe for leftovers, they are perfect on salad! Chop yourself a little salad, add the leftover vegetable fajitas, some sour cream and guacamole salsa, YUM!
This is also a great recipe to make for meal prepping because you can eat it a few different ways, in a tortilla, on a salad, in a lettuce cup, over rice or even by itself. It’s delicious.
How To Store These Healthy Fajitas
Store them in the refrigerator, in an air tight container for up to 3 days.
