Sweet Potato Nachos Bake

Sweet Potato Nachos Bake
These sweet potato nachos are one of my family’s favorite dinners that I make. This recipe is also a great way to use up any leftover chicken or any other leftover meat you have in place of the ground turkey!
You only need a few simple ingredients to get this recipe started, you probably have most of it in your well-stocked pantry.
INGREDIENTS
- 1 pound lean ground turkey- I like to use turkey in this recipe, but if you have beef or shredded chicken you can use that too!
- 2 large sweet potatoes- Peeled and thinly sliced.
- 1 cup corn- I like to use fresh corn when I can because the sweetness to fresh corn is unmatched, but you can use canned or frozen as well.
- 1 cup any beans you like- I like black beans or pinto beans
- 1 can diced tomatoes
- 1.5 teaspoons cumin
- 1.5 teaspoons paprika
- 1.5 teaspoons chili powder
- 1 T Mrs Dash Garlic and herb
- salt and pepper to taste
- 1 cup shredded cheese- I like to use the Mexican blend cheese, but you can use any cheese you like or have on hand.
How To Make This Sweet Potato Nacho Bake
Preheat oven to 350°.
In a skillet, on medium heat, brown the lean ground turkey. Cook about 6 mins, or until almost cooked through. Drain off excess grease and put back into the skillet.
Add the spices and diced tomatoes into the skillet and cook 10 mins. Stirring occasionally.
Once done remove from heat and set off to the side for layering.
This is how your first layer will look.
In your cast iron skillet, place a layer of sliced sweet potatoes covering the bottom. Top with half of the meat mixture, half the corn, half the beans, then half the cheese Repeat all layers one more time, ending with cheese on top.
Bake uncovered 45 minutes.
When done top with your favorite nacho toppings.

Do I need to use a cast iron skillet?
I like to bake this in a cast iron skillet, you can use a baking dish instead if you don’t have one.
I have made this in a baking dish and it works out just fine, the edges are just not as crispy. You want a dish about 10 inches around.
Vegetarian Sweet Potato Nachos Bake
You can leave out the meat and this dish is just as delicious. You can also add in other veggies to fill it up.
You can also leave out the cheese or use vegan cheese for a vegan nachos bake.
