Healthy Meatloaf Casserole

One of my husbands favorite things to have for dinner is meatloaf, usually accompanied by mashed potatoes. So I came up with the Healthy Meatloaf Casserole to put these two things together in a healthier way. It’s pretty simple and delicious. My oldest son said that it was FABULOUS, and that was a mom win for me because he has sensory issues and is a picky eater. 🙂

Healthy Meatloaf Casserole
First thing you do is make your meatloaf. I use organic grass-fed lean ground beef for mine and I make it the way my grandma always made it. I start with saltines, milk, and egg in my mixing bowl and let the saltines soak up some of the milk and soften up.
Then I add garlic, ketchup, onion, celery, salt and pepper, mix it up with my hands, the best tools in the kitchen! I always top it with the classic brown sugar and ketchup mixture.
You can make this dish even lower carb by leaving out the brown sugar and using a low sugar ketchup.
Pop it in the oven and when it’s close to done you add your cauliflower mash on top with some cheese! SO good. You can find my Easiest Cauliflower Mash recipe here. You will need this cauliflower mash for the Healthy Meatloaf Casserole recipe. I use my ninja blender to make this mash, so quick and easy.
If you are not wanting this to be lower carb or healthier, you could always top it with mashed potatoes, but honestly this creamy cauliflower mash is SO good. I don’t think you will miss the potatoes.
Give it a try and let me know how you like it! You could also make this gluten free by using gluten free crackers.

This is NOT low carb with saltines and brown sugar.
Hi Brandi, this is a lower carb version because it has cauliflower mash. It would be even more lower carb if you leave out the brown sugar. With the brown sugar it has 23 net carbs instead of around 47 carbs as other version. Hope this helps!
Thank you for sharing. This recipe looks delicious, I must try this recipe. I’ll put it in the diet for our plan.

Yum! I might just have to make this tonight (though with potato instead of cauliflower- doing a no spend November and don’t have any on hand!)
A no spend November? Interesting, I would love to know more about that. Potatoes will be delicious.
