Easiest Cauliflower Mash
This is the creamiest and easiest cauliflower mash! It doesn’t take many ingredients and I only use the microwave and my Ninja Blender. You can use a food processor or blender. I have been using my Ninja Blender for a lot more lately than just my regular smoothies. I have been making soups, sweet potato mashes, margaritas :), and now the easiest cauliflower mash. The other day I used it to chop up a bunch of vegetables to add to my meatballs. It’s like a food processor and blender in one! Here is the Ninja Blender and I love it, saves me so much time and effort when cooking.
The Easiest Cauliflower Mash
So a lot of times when I make things that would normally call for mashed potatoes, I make cauliflower mash instead. It mimics mashed potatoes and it gives you a nice serving of vegetables. Great for low-carb diets. Through trial and error I have found the way to make the creamiest mash. My kids even love it! Shhh! Don’t tell them it’s all vegetables.
This recipe is super easy. First, chop the cauliflower into pieces, throw it in a microwave safe bowl covered with water and cover it with plastic wrap. Microwave on high 12 minutes, then let it sit covered for 8 more minutes. After it’s nice and tender, throw it in the blender or food processor with milk (we use almond), butter, garlic, a little light cream cheese, and salt and pepper. AND THAT’S IT! Simple, right?
This cauliflower mash is good for so many things, I have used it to thicken soups instead of cream. Cauliflower has lots of vitamin C, K, B6 and more, not a bad thing to add into your diet. 🙂
