Cauliflower mash is a great alternative to mashed potatoes.  There are many different variations of cauliflower mashed potatoes but my favorite way to make them is with a little cream cheese for texture and it’s made right in my blender.  My Easy Cauliflower Mashed Potatoes are creamy, delicious and good for you too!

Easy Cauliflower Mashed Potatoes

When something calls for mashed potatoes, most of the time I make cauliflower mash instead.  It mimics mashed potatoes and it gives you a nice serving of vegetables.  Great for low-carb or keto diets. There are only 5 carbs (3 net carbs) in my cauliflower mashed potatoes, normally there are 35 carbs in 1 cup of regular mashed potatoes.   Through trial and error I have found the way to make the creamiest mash.  My kids even love it!  Shhh!  Don’t tell them it’s all vegetables.  

It doesn’t take many ingredients.  You can use a food processor or blender.  I have been using my Ninja Blender for a lot more lately than just my regular smoothies.  I have been making soups, sweet potato mashes, margaritas :), and now Easy Cauliflower Mashed Potatoes.  

Sometimes I used it to chop up a bunch of vegetables to add to my meatballs or burgers, try doing that with my Stuffed Turkey Meatballs for some extra veggies.  It’s like a food processor and blender in one!  

 

 

Cauliflower Mashed Potatoes Recipe

This recipe is super easy, like super, super easy.

Cauliflower Mashed Potatoes

Cauliflower Mash Ingredients

  • 1 large head cauliflower, chopped in large pieces
  • 1 c milk, we use almond milk, but you can use whatever milk your family enjoys
  • 1/2 c hot cooking water, that you cooked the cauliflower in
  • 2 tsp garlic powder
  • 1 T cream cheese, sometimes I use laughing cow cheese too!
  • 1 T butter
  • Salt and Pepper to taste

This is the basic recipe for my easy cauliflower mashed potatoes, I like to switch up flavors by adding the different flavored laughing cow cheeses.  Or adding a sweet potato to the party. Yum!

 

Tip: If you DO NOT LIKE cauliflower mash and the cauliflower flavor is too strong, add in 1 small potato.  It gives it just that touch it needs to tastes just like mashed potatoes.  When I make it like this, my kids have no idea the cauliflower is even in there.

 

How To Make Easy Cauliflower Mashed Potatoes

First, chop the cauliflower into pieces.

Microwave Method: Throw the cauliflower into a microwave safe bowl covered with water and cover it with plastic wrap.  Microwave on high 12 minutes, then let it sit covered for 8 more minutes. 

Stove Top Method: Boil water in a large pot.  Boil until fork tender about 5 minutes.

Cauliflower Mashed Potatoes

After the cauliflower is nice and tender, remove from pot or microwave bowl and throw it in the blender with all the other ingredients, except the cooking water.  Blend on high and add the cooking water little at a time until you get the consistency you desire.

Transfer to a serving bowl, taste and add salt and pepper as needed.  Maybe even top with a little butter. 🙂

 

How Many Servings Does Cauliflower Mashed Potatoes Make?

My healthy cauliflower mash makes 6 servings.  

 

Cauliflower Mashed Potatoes Storage

I only like to keep my cauliflower mash in the refrigerator for maximum 3 days.  The cauliflower flavor gets a little stronger and I personally don’t think it tastes the best after 3 days.  

Store in an air tight container.

 

What Can I Use Cauliflower Mashed Potatoes For?

Easy cauliflower mash is good for so many things.  You can serve it as a side dish along side your favorite dinners like Ranch Chicken Tenders, Crispy Breaded Cod, or Healthy Sloppy Joes.

Another way you can use it is as a topping.  Shepard’s Pie or my Healthy Meatloaf Casserole are a great way to use them.

I have even used the leftovers to thicken up soups, they are so versatile!

The creamiest and easiest cauliflower mashed potatoes you'll ever make.

Prep Time 5 minutes
Cook Time 5 minutes
Passive Time 2 minutes
Total Time 12 minutes

Ingredients

  • 1 head cauliflower
  • 1 cup milk, we use almond, use whatever your family uses
  • 1/2 cup hot cooking water, use the water the cauliflower cooked in
  • 2 teaspoon garlic powder
  • 1 tablespoon cream cheese
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. Chop cauliflower head into bite size pieces
  2. Boil water in a large pot. When water is to a boil, toss in cauliflower for 5 minutes or until tender.
  3. Once cauliflower is tender, use a slotted spoon to place it into the blender with all the other ingredients except the hot cooking water. Add the hot cooking water in until the desired consistency. Blend until smooth.
  4. ENJOY!

    • I have not used frozen riced for this recipe, I have used it for other recipes before. I would cook the bag in the microwave according to the directions and then put it with the other ingredients in the blender. And probably use 2 bags for this recipe. Let me know how that works out! 🙂
