Easy Pumpkin Pie Pancakes

It’s starting to feel like fall, y’all!  And of course it isn’t fall without pumpkin flavored everything, right?  So here I present you, WHOLE GRAIN EASY PUMPKIN PIE PANCAKES.  They are so delicious.  Topped with a little whip cream, just like a pumpkin pie!

Easy Pumpkin Pie Pancakes

Fall is my favorite time of the year and it just doesn’t feel like fall without pumpkin flavored everything (except the coffee, I’m sorry I just don’t like it anymore, it’s giving candle wax).  Pumpkin scents, pumpkin donuts, so of course pumpkin pie pancakes.  I love pumpkin pie so I figured why not make my usual whole grain pancakes into pumpkin spice pancakes to fill my pumpkin pie cravings all year round. It was a huge hit in my house and I am sure it will be in your house too.  

Easy Pumpkin Pie Pancakes

This pumpkin pancake recipe is delicious as breakfast but would be equally delicious as a dessert.  

 

INGREDIENTS

  • 1 cup canned pumpkin Not the pumpkin pie filling.  I like to be able to add the amount of spice and sugar that I like.  
  • 2 T pumpkin pie spice
  • 1 1/2 cups  complete pancake mix– Make sure to get the complete pancake mix, the kind that only needs water added.
  • 1 T agave or sweetener of choice
  • 1 cup water

Pumpkin is VERY high in vitamin A, and it is considered a vegetable, so you are eating vegetables and whole grains. 🙂  You can’t go wrong with that.  I like to use the just add water pancake mixes when I make pancakes at home, I just don’t like getting all the things out to make pancakes in the morning.  It makes things quick and easy and you can find great options out there.

 

 

How to make Pumpkin Pancakes From Mix

For these easy pumpkin pancakes just dump everything in the bowl and mix together.  Let sit 2 minutes to thicken.

I like to use my griddle to cook these pancakes because you can cook lots at one time.  If you do not have a griddle, you can use a skillet.

Heat up your griddle on medium heat and put a little butter on the griddle.  Or you can spray with a non stick spray if your prefer.

Using an ice cream scoop (for even sized pancakes), scoop the pancake batter and place onto hot griddle.  Use the back of the ice cream scoop to flatten the pancake out a little bit.  These pumpkin pie pancakes are a little dense so this helps them cook evenly.

When you see bubbles forming, flip the pancakes.

I like to top these pancakes with organic whip cream.  The whip cream gives it enough sweetness without syrup, but you can top them with maple syrup if you like.  My kids love syrup and whip cream on theirs, of course.

Recipe makes 9-10 Pumpkin Pie Pancakes.

When I eat these pumpkin spice pancakes, it feels like fall.  And who doesn’t love fall?

Easy Pancakes with all the favors of pumpkin pie!

Cook Time 6 minutes
Total Time 11 minutes

Ingredients

  • 1 cup canned pumpkin
  • 2 tablespoons pumpkin pie spice
  • 1.5 cup complete pancake mix
  • 1 tablespoon agave or sweetener of choice
  • 1 cup water
  • whip cream and maple syrup, to top the pancakes

Instructions

  1. Put all the ingredients, except whip cream and syrup, into a large mixing bowl, mix until combined. Let sit 2 minutes.
  2. Heat up pan or griddle on medium heat. Put a little butter on the griddle.
  3. Using an ice cream scoop, scoop pancake mixture and place onto hot griddle. Use the back of the ice cream scoop to flatten the pancakes a little bit.
  4. When you start to see bubbles, flip over the pancakes.
  5. Top with some whip cream or maple syrup if you like.
  6. ENJOY!
