Healthy Almond Joy Cookies

I love making healthy banana oatmeal cookie variations to keep on hand for snacks.  You can make them so many different ways and add lots of healthy things into them.  I like to add in extra protein and eat them for breakfast.  This is also a great recipe to get your kids in the kitchen to help out!

 

You only need 5 ingredients to make this almond joy cookie recipe and it can be easily made gluten free or dairy free.

INGREDIENTS

  • Bananas- Use bananas that are ripe, brown and spotty.
  • Quick-cooking oats- To make this recipe gluten free, use gluten free oats.
  • Mini Dark Chocolate Chips- To make this almond joy cookie recipe dairy free, use dairy free chocolate chips.
  • Shredded Coconut- Sweet or unsweetened, whatever you prefer.
  • Sliced Almonds

 

 

How to make Healthy Almond Joy Cookies

First, preheat your oven to 350° F.

Mash bananas with a fork in a mixing bowl until most of the lumps are out.  Make sure to use brown spotty bananas so they have delicious banana flavor.

Add the 4 other ingredients to the bowl.

Mix until all combined together.  It will look thick.

Then you are going to put them onto a baking sheet sprayed with cooking spray.  I like to use an ice cream scoop to get uniform size cookie balls.  This banana oatmeal cookie recipe will make 8-9 large cookies depending on the size.

Push down on the tops a little and round them with your hands.  These aren’t traditional cookies so they won’t change shape when baking, they need a little help.

Bake the healthy almond joy cookies for 20 minutes, or until the edges are golden brown.

Healthy Banana Oatmeal Cookies

I really love making this banana oatmeal cookie recipe and it is very versatile. The base ingredients are bananas and quick-cooking oats.  You can change up the other ingredients to make whatever kind of cookies you like!

For my boys I make them with just chocolate chips, they aren’t huge fans of nuts or coconut.  You could also add some fancy sprinkles to make them look fun.  A chocolate peanut butter banana oatmeal cookie combination is delicious as well.

These cookies are a nice and healthy treat to give your kids instead of candy or other junk available.  When you get them into the kitchen and let them help choose the things you add into the cookies, they will be more likely to eat them because they helped out!

A cookie that is delicious and healthy, unbelievable, right? Well believe it! Chocolate, coconut and almonds make these healthy cookies have the flavors of delicious Almond Joy Candy bars.

Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 3 bananas, spotty and brown, small
  • 1.5 cup quick-cooking oats
  • 1/2 cup shredded coconut, unsweetened or not, this is up to you.
  • 1/4 cup mini chocolate chips, dark or semi-sweet
  • 1/4 cup sliced almonds

Instructions

  1. Preheat oven to 350° F.
  2. Mash bananas with a fork in a mixing bowl until most of the lumps are out.
  3. Add all the other ingredients into the bowl. Mix until combined
  4. I use an ice cream scoop to get uniform size balls. Put them onto a baking sheet sprayed with cooking spray. Push down on the tops a little to make the cookie flat.
  5. Bake for 20 minutes until the edges are golden brown.
  6. Enjoy!
